Make authentic Turkish sucuk at home with one complete set. Sucuk (pronounced "soo-jook") is the dry, fermented, garlic-and-cumin beef sausage served sliced and pan-fried across Turkey, the Middle East and the Balkans. This set gives you the three things you need to make it yourself: a ready-mixed sucuk spice blend, a natural casing to stuff, and butcher's string to tie the links.
The spice mix is the mild version (az acılı) — warm and aromatic with only light heat, so the flavor suits the whole family. It is blended from natural spices with no additives: salt, sweet paprika, cumin, allspice, hot paprika, garlic, cinnamon, black pepper and fenugreek. Fenugreek is the traditional note that gives real sucuk its signature aroma.
Choose your batch size:
• 75 g spice — seasons about 1 kg of meat
• 225 g spice — seasons about 3 kg of meat
• 375 g spice — seasons about 5 kg of meat
Each option includes spice plus natural casing and string for that batch.
How to use: grind your beef (a little fat helps it bind), massage in the spice mix and a clove or two of crushed garlic, then knead the mixture for a few minutes so it holds together. Soak the casing in lukewarm water, stuff it with the seasoned meat, and tie into links with the string. Hang in a cool, airy place to ferment and dry — about a week for a soft, sliceable sucuk, two to three weeks for a firmer, more intense one. Slice thin and fry until the edges crisp; classic with eggs (sucuklu yumurta) at breakfast.
The blend is versatile beyond sausage too. Use it to season meatballs (köfte), soups, pilaf, marinades, çiğ köfte and stuffed grape leaves whenever you want that warm Turkish spice profile.
