Open the tin and you find roughly twenty individual cylinders of halva, each one rolled — sarma in Turkish means wrapped or rolled — and striped with crushed Antep pistachio. This is not a slab you slice. Every piece is already formed, sealed in its own layer of tahini halva, the pistachio pressed into the outer surface so the green shows through on every piece.

Okyay has been making tahini halva in Turkey since 1948. The sarma variety is what they call paddle halva — a traditional production method in which the tahini and sugar mass is worked by hand-paddle rather than machine-extruded, creating the fine, layered, melt-on-the-tongue grain that separates artisan halva from commercial product. No glucose syrup is added. No preservatives. No oil-retaining agents. The ingredient list is short because the product is built on two things done well: quality sesame tahini and real pistachios.

The product carries the name Mn & Salwa — المن والسلوى, the phrase for the heavenly food described in scripture as sent down to the Children of Israel in the desert: something sweet, pure, and given without effort. The name is not marketing decoration. It is a statement about what this halva aspires to taste like — clean sweetness, nothing artificial, nothing heavy.

The Tin

The 300g version comes in a metal box — a proper tin, not a plastic sleeve. The tin protects the delicate rolled pieces in transit and keeps the halva from drying out. The gross weight of the 300g tin (including packaging) is around 540g. The 380g version comes in a plastic box. Both sizes contain the same sarma halva; the choice is format.

How to Serve

Sarma helva is a tea-table sweet in Turkey. Set a few pieces alongside a glass of black Turkish tea and they disappear quickly. At room temperature the halva is firm but not hard; the texture gives way cleanly and the sesame-pistachio combination has a depth that plain sugar confection never reaches. The rolled format means each piece is a self-contained serving — no knife, no plate required.
