Okyay has been making tahini halva in Turkey since 1948. The sarma variety is what they call paddle halva — a traditional production method in which the tahini and sugar mass is worked by hand-paddle rather than machine-extruded, creating the fine, layered, melt-on-the-tongue grain that separates artisan halva from commercial product.
