Seven components go into it. Four are raw, unroasted, unsalted nuts: walnut kernels, almonds, cashews, and hazelnut kernels — the hazelnuts coming from Turkey's Black Sea coast, the region that grows most of the world's supply. Three are dried fruits: small seedless İzmir raisins from the Aegean, dried apricots, and dried cranberries. Nothing is coated, fried, or flavored. The cranberries, as is standard for dried cranberries, are sweetened; check the pack label if you avoid added sugar or sulfites in dried fruit.
Because the nuts are raw rather than roasted, the taste is quieter than a salted bar mix — the walnut is slightly tannic, the hazelnut milky, the cashew soft and sweet. The raisins, apricots, and cranberries supply the chew and the sugar. It works by the handful, stirred into yogurt or oatmeal, or tipped over a salad. In Turkish homes a bowl of kuruyemiş sits out whenever guests come for tea; this mix does the same job.
