Kardelen Kestane is a smooth, sweetened chestnut puree from Bursa, the Turkish city long regarded as the country's chestnut capital. The same multilingual label calls it Kestane Püresi, Chestnut Spread and Crème de Marrons — three names for one velvety brown paste milled from cooked chestnuts and sweetened to a soft, dessert-ready consistency. It is made by Kardelen (İlka Şekerleme), a Bursa producer of chestnut sweets since 1991.

Chestnut puree sits between a candied chestnut and a true cream: thick enough to hold a shape, soft enough to spread or pipe. Spoon it straight onto warm toast, brioche or pancakes; swirl it through yogurt, porridge or ice cream; or fold it into whipped cream for the classic French Mont Blanc, the meringue-and-chestnut dessert this kind of puree was made for. It also works as a ready filling for crêpes, tarts, layer cakes and pastry.
