Finely ground Turkish coffee from Hafiz Mustafa 1864, the historic Istanbul house, infused with natural mastic gum — damla sakızı in Turkish. This is the mastic version, not the plain tin: alongside the deep, roasted aroma of the coffee you get a cool, resinous lift of pine and cedar that rises as the cup is poured and stays on the finish.
It is brewed the traditional way in a cezve (Turkish coffee pot). Spoon about 7 g — one dessert spoon — of coffee per cup into the cezve, add cold water measured in the cup you will serve in, stir, and add sugar to taste if you like. Bring it up slowly over low heat, and just as the foam rises to the boil, pour into your cup, foam and all, and let the grounds settle.
