Pistachio Roll — Fıstıklı Dürüm in Turkish — is the Hafiz Mustafa baklava that hardly looks like pastry at all. Thin hand-rolled phyllo is wound tightly around a dense core of Gaziantep pistachios, then each roll is coated in so much ground pistachio that the slices come out green from edge to edge. Dürüm simply means “wrap” or “roll” in Turkish, and the brand’s Dubai boutique lists this same product as Pistachio Wrap Baklava. Inside the tin the rounds sit packed in tight rows — noticeably more pistachio than dough.
Hafiz Mustafa has made sweets in Istanbul since 1864, when Hacı İsmail Hakkı Bey opened his first shop in Bahçekapı. The bakery states that its baklava is baked daily, sweetened with natural beet sugar instead of glucose syrup, and made without preservatives, additives or colorants, and that it holds ISO 9001 and ISO 22000 certifications. The ingredient list here is short: pistachio, wheat flour, wheat starch, butter, egg, sugar, water, salt and lemon juice.
Two sizes are available: the Medium Box with 1–1.1 kg of rolls and the Big Box with 1.3–1.4 kg. Both arrive in the brand’s red metal tin with the founder’s portrait and 1864 on the front — a box made for gifting, and one that tends to stay in use long after the baklava is gone.
