Dried kiwi slices cut into full rings, so each piece keeps the look of the fresh fruit: bright green flesh, the pale center, and the ring of tiny black seeds. The slices are lightly candied — gently infused with sugar before drying, which is the traditional way dried kiwi is prepared in Turkey. That step is what gives them their soft, chewy bite and glossy, lightly crystalled surface, and it concentrates the kiwi's natural sweet-tart character instead of flattening it. You still taste the tang of kiwi under the sweetness; these are not a one-note candy.
Drying changes the fruit completely as a pantry item. Fresh kiwi is roughly 83 percent water, and it takes about 6 to 7 kilograms of fresh fruit to produce a single kilogram of dried slices — so a small bag holds far more fruit than it looks. The slices need no refrigeration, no peeling, and no knife, which makes them practical where fresh kiwi is not: lunchboxes, desk drawers, hiking packs, and long trips.
In the kitchen they work in two directions. Whole, they hold their ring shape, so bakers and home cooks use them to decorate cakes, tarts, cheesecakes, and pavlova — the green rings read clearly against cream or chocolate.
