Chia seeds (Salvia hispanica) are tiny black and white seeds originally cultivated in Mexico and Guatemala, and among the richest plant sources of omega-3 fatty acids available. This 250 g pack contains raw, unprocessed whole chia seeds — nothing added, nothing removed. They have virtually no flavor of their own, which makes them easy to work into almost any meal without changing the taste.
Nutritionally, a 28 g serving (approximately 2 tablespoons) provides around 140 calories, 11 g of dietary fiber, 4 g of protein, and 7 g of unsaturated fat. Approximately 60% of the fat in chia seeds comes from alpha-linolenic acid (ALA), the plant form of omega-3. Chia seeds also supply calcium and phosphorus, and contain all nine essential amino acids, making them a complete plant protein. (Nutrition data: Harvard T.H. Chan School of Public Health, The Nutrition Source.)
In the kitchen, chia seeds are straightforward to use. For chia pudding, stir ¼ cup (about 40 g) of seeds into 1 cup of liquid — dairy milk, almond milk, oat milk, or coconut milk all work — then refrigerate for at least 2 hours or overnight. The seeds absorb up to 10 times their weight in liquid and form a thick, gel-like texture. Add to smoothies for body, stir into oatmeal or yogurt, sprinkle over salads, or mix into baked goods. As an egg substitute in baking, combine 1 tablespoon of whole chia seeds with 3 tablespoons of water, let sit for 5 minutes until thickened, and use in place of one egg.
