This is the assorted walnut selection from Hafız Mustafa, the Istanbul confectioner founded in 1864 in Bahçekapı — during the reign of Sultan Abdulaziz — by Hacı İsmail Hakkı Bey, who began by making hard candy with a stone mortar in the shop's basement. His son, Hafız Mustafa, gave the house its name, and the red metal tin still carries the founder's portrait on its emblem.
Inside sit neat rows of different shapes: classic cut pieces, slender finger rolls, and bird's-nest rounds crowned with a walnut half. Each shape bakes to a different balance of phyllo, walnut, and syrup — the cuts give you the full layered stack, the rolls come out tighter and crisper, the nests hold more syrup at the base. Walnut is the older, homestyle side of the baklava tradition: toastier and deeper than pistachio, with a faint bitter edge that keeps the sweetness in check.
