Turkish Pestil Stuffed Fruit Pulp Sweets, 4 Nut Flavors 500g

Pestil is one of Turkey's oldest sweets: ripe fruit pulp, slow-dried in the sun until it becomes a soft, pliable fruit leather. In Gümüşhane, the mountain town famous for it, that leather is folded by hand into little muska triangles and filled or coated with nuts. This 500g box from Bİrsalkım brings together about nine handmade pieces in four traditional finishes.

Each piece starts as the same naturally sweet, chewy fruit pulp, then takes on its own character:

• Pistachio — rolled in finely chopped green Antep-style pistachio
• Hazelnut — folded around Turkish hazelnut for a deeper, roasted note
• Kadayıf — wrapped in fine shredded kadayıf pastry for a light crunch
• Coconut — coated in shredded coconut, the gentlest of the four

The texture is what surprises people: soft and a little sticky like a date, with the snap of nuts on the outside. It is not lokum (Turkish delight) and not a dried fruit bar — pestil sits somewhere of its own, closer to a natural fruit-and-nut confection. Turkish families keep it on the table with coffee or tea, pack it for travel, and bring it out for guests.

Because it is made the traditional way — fruit, nuts, and a touch of honey, dried rather than cooked — there are no added preservatives in the classic recipe. Keep the box cool and dry and reseal it between servings.
