Pestil is made by cooking down fruit pulp, spreading it into thin sheets, and drying it into a soft, chewy leather. Here that leather is wrapped around a hazelnut-butter centre and rolled into slim cylindrical logs, then each log is coated on the outside in one of four finishes.
