Rolled pestil from Gümüşhane, the eastern Turkish region known for this fruit leather. Pestil is made by cooking down fruit pulp, spreading it into thin sheets, and drying it into a soft, chewy leather. Here that leather is wrapped around a hazelnut-butter centre and rolled into slim cylindrical logs, then each log is coated on the outside in one of four finishes.
The 500g tray holds all four coatings together:
- Pistachio – rolled logs finished in chopped green pistachio
- Hazelnut – finished in ground hazelnut, with the nut also running through the centre
- Kadayıf – wrapped in fine shredded kadayıf pastry for a light crunch
- Coconut – rolled in white desiccated coconut
This is the rolled (sarma) style: cut logs you slice into bite-size rounds, not folded triangles or a single-flavor pack. The fruit base gives a natural, fruity-sweet chew, the hazelnut centre adds richness, and each outer coating changes the texture and finish so one tray covers four distinct tastes.
