Each piece is a rolled log of soft Turkish delight — lokum — wrapped in a delicate white layer, then generously coated in crushed dried rose petals that give it that deep pink-purple exterior. Inside, whole and chopped Antep pistachios are studded throughout a rose-scented gel, so every cross-section reveals a mosaic of green against ivory.
This style is called sarma lokum — rolled Turkish delight — a format that concentrates flavour and gives a distinct finger-shaped form different from cut square varieties. The lokum base is made from starch and sugar cooked to a smooth, elastic gel; the rose petals on the outside are real dried petals, not sprinkles, and they cling to the surface without hardening the outer texture.
The pistachio is sourced from Antep (Gaziantep), the region in southeast Turkey recognized globally for producing the most flavourful, vibrantly green pistachios. Its slight saltiness and crunch offset the floral sweetness of the rose lokum perfectly.
