Antep pistachio paste — known in Turkish as Antep ezmesi — is a solid, marzipan-style confection made from ground Antep pistachios and sugar. This 200 g block from Tuğba Kuruyemiş is shaped into firm green nuggets studded with whole pistachio pieces, with the deep green color and rich, buttery pistachio flavor that comes from the kernel itself rather than from coloring. Despite the word "halva" sometimes used on the label, this is not a sesame tahini halva. The supplier lists just two ingredients: Antep pistachio (Antep fıstığı) and sugar made from sugar beet. There is no tahini and no sesame in it — only pistachio and sugar — so the texture is dense and fudgy like pistachio marzipan, not flaky. Antep (Gaziantep) in southeastern Turkey is famous for its pistachios, and Turkey is one of the world's top three pistachio producers.
