Turmeric powder from Tuğba Kuruyemiş, milled from the dried rhizome of Curcuma longa into a fine, golden-orange ground spice. Turmeric is a member of the ginger family, and the natural compound curcumin is what gives the powder its warm, saffron-like colour. This is the same earthy, slightly peppery spice known in Turkish kitchens as zerdeçal and in Arabic as كركم مطحون.
Ground turmeric is one of the most versatile pantry spices. A small spoonful turns plain basmati or pilaf into bright golden rice, and it forms the backbone of homemade curry powder alongside cumin, coriander and black pepper. Stir it into lentil soups, chickpea stews and roasted vegetables (cauliflower, potatoes and carrots take colour beautifully), or whisk a pinch into scrambled eggs and savoury batters. Because turmeric is fat-soluble, blooming it for a few seconds in warm oil or ghee before adding other ingredients releases its fullest colour and aroma.
To make golden milk (a turmeric latte), warm 250 ml of milk or a plant-based alternative with about half a teaspoon of this turmeric, a pinch of cinnamon and ground black pepper, and sweeten to taste with honey. The pepper and a little fat help carry the spice through the drink. Turmeric has long been a traditionally valued kitchen staple across Anatolia, the Middle East and South Asia.
