Köfte harcı is the shortcut behind weeknight Turkish meatballs. It is not a pure spice blend: this 267 g bag from Tuğba Kuruyemiş combines galeta unu (fine rusk breadcrumbs) with twelve seasonings — cumin, garlic powder, coriander, black pepper, red pepper, chili flakes, allspice, thyme, mint, curry and salt — so the binder and the flavoring go into the bowl in one step. The breadcrumbs absorb the meat juices during cooking, which is what keeps köfte tender instead of dense.
To use it, knead a few spoonfuls into ground beef or lamb with grated onion and a splash of water, rest the mixture in the fridge for 20–30 minutes, then shape and cook.
