What Is Uğut?

Uğut (pronounced oo-oot) is a traditional Anatolian dessert spread made entirely from sprouted wheat — no added sugar, no additives. The sweetness comes from the grain itself: as wheat germinates, its starches convert to simple sugars, producing a naturally sweet, amber-coloured spread with a dense, marmalade-like texture. Outside Turkey it is nearly unknown, which makes it genuinely rare on international shelves.

Origin and Geographical Protection

This jar is produced by Toprak Doğal in Taraklı, a small town in Sakarya province, northwestern Turkey. Taraklı Uğut Tatlısı holds a registered geographical indication (Mahreç İşareti, No. 809, issued 27 July 2021, Turkish Patent and Trademark Office), certifying that only uğut made in Taraklı from locally grown wheat, following the documented traditional method, may carry this name. It is also known as Nevruz tatlısı — the dessert of Nevruz, the Anatolian spring festival — because sprouted wheat, a seed brought to life, became a symbol of renewal and the new growing season.

Ingredients and Method

Ingredients: sprouted wheat, wheat flour, water. Nothing else.

Wheat grains are soaked and spread on cloth-lined trays in a dark, humid room at 18–26 °C. Over five to six days they germinate, sending up pale shoots 4–5 cm long. The sprouted grain is then crushed with a wooden mallet to press out the juice. That juice, blended with a small amount of wheat flour and water, is poured into large cauldrons — traditionally copper — and cooked over a wood fire for 15 to 20 hours, stirred continuously to prevent scorching. The liquid deepens to a rich amber and thickens before being sealed hot into glass jars.

Serving

Spread on toast or flatbread at breakfast, classically alongside tahini — the natural sweetness of uğut against the toasty bitterness of sesame paste is a well-established Anatolian pairing. Also works spread on sourdough, stirred into warm porridge, or served with white cheese in place of honey or jam.
