Toprak Doğal Pine Honey (Çam Balı) is a 100% pure Turkish honeydew honey harvested in the pine forests of Muğla, in Turkey's South Aegean region. What makes pine honey different starts on the tree, not the flower. It is a honeydew honey: bees gather a sweet secretion left on Turkish pine (Pinus brutia) by a tiny scale insect, Marchalina hellenica, that lives on the pine sap, then ripen it into honey. That origin gives çam balı its signature taste, deeper and far less sweet than flower honey, with woody, resinous, faintly malty notes and a warm, piney aroma.
Because pine honey is naturally low in glucose, it resists crystallizing and stays liquid and pourable for a long time, so the last spoonful looks like the first.
