Pestil is one of Anatolia's oldest preserved foods: mulberry syrup cooked with milk, honey, and wheat flour into a thick, pourable batter called herle, then hand-spread onto cloth and sun-dried into a chewy, glossy sheet. This version — fındıklı pestil — is layered with roasted hazelnuts before drying, so every bite carries both the deep, wine-dark sweetness of mulberry and the crisp richness of a whole nut pressed into the leather.
The mulberries come from Gümüşhane, a mountainous province in north-eastern Türkiye where mulberry trees grow along the Harşit Valley river banks. Gümüşhane pestil and its companion köme hold a Geographical Indication registration from the Turkish Patent and Trademark Office, recognising the region's distinct production methods and the character of its fruit. Toprak Doğal sources from this tradition and packs it in a 250 g tray, sealed under the brand's brown label.
What it tastes like
The base layer is chewy and naturally sweet — not sugary, but fruit-forward with a faint tartness from the mulberry. Honey adds depth without dominating. The hazelnuts (20% of the composition) are distributed through the leather, giving pockets of toasty, slightly fatty crunch against the soft, yielding sheet. It is a texture contrast that makes pestil more interesting than ordinary fruit leather.
How people eat it
Cut into strips and eat as a snack. Soak a piece overnight in water and it softens into a syrup-like drink, a traditional way to serve it. It can also be warmed in a dry pan until pliable, then wrapped around more nuts. At room temperature in a cool, dry place, the slab keeps well without refrigeration.
