The carob molasses (keçiboynuzu pekmezi, also called harnup or دبس الخروب) is made from one ingredient: 100% carob. Pods from carob trees growing in the Mediterranean climate around Antalya are gathered in season, ground in stone mills, soaked in water for 8 to 12 hours, then strained and slowly reduced at low temperature until thick. No added sugar, no preservatives — the near-black molasses takes all its sweetness from the fruit itself. It pours like dark honey with a deep, faintly cocoa-like flavor, which is why many use it as a natural sweetener in milk, yogurt, smoothies, and baking.
The tahini is the Konya style known as Bozkır tahini or çifte kavrulmuş — double roasted. Sesame seeds from the Manavgat area are soaked to remove bitterness, hulled, then cooked for five hours over a wood fire before stone milling. That second, longer roast is what separates it from supermarket tahini: the sesame oil cooks through fully, giving a darker, toastier paste. It is 100% sesame, nothing else. Contains sesame.
