This is Turkish delight in its rolled sarma form: a thin sheet of soft, chewy lokum wrapped tightly around a generous core of ground pistachios, then sliced into pinwheel rounds that show a green spiral in every piece. Made by Afyon Lokum Atölyesi, it is built around Antep pistachios — the pistachio variety from the Gaziantep region of Turkey that holds a registered geographical indication and is prized for its deep colour and intense flavour.
The texture is the point. A real lokum should give gently when you bite and then melt rather than turn sticky, and the pistachio filling adds a soft, nutty chew against the tender sweet.
