Turkish pistachio pulled halva (çekme helva) is a flour-based pulled sweet, not a sesame or tahini halva. It is made the traditional Kastamonu way: wheat flour is slowly toasted in fat to a deep, nutty roux, blended into hot sugar syrup, then kneaded and pulled hard while warm until it sets into fine, fibrous threads. That hand-pulling is what gives çekme ("pulled") halva its signature light, layered, almost spun texture, very different from the dense, fudgy sesame halva most people know.
This version is studded with Antep pistachio (2.5%), the prized green pistachio from southeastern Turkey, and dusted with ground pistachio for a rich, roasted, faintly sweet finish. It is sweetened with natural beet sugar instead of glucose syrup, and made with no preservatives or artificial additives.
