Şekerci Cafer Erol is one of Istanbul's oldest confectionery houses. The family learned its craft in the dessert kitchens of the Ottoman palace in the late 1700s and opened its first shop in Eminönü in 1807; today it runs branches across Istanbul and as far afield as London and Baku. This 400 g tin is the house take on the coffee Istanbul has been drinking for centuries.
The tin holds 100% Arabica coffee, roasted by traditional methods and ground to the powder-fine texture Turkish coffee requires — noticeably finer than espresso. Brewed slowly in a cezve with cold water, it builds the thick, persistent foam that separates a properly made cup from an ordinary one.

To prepare, stir coffee, cold water and sugar to taste in a cezve, heat gently without letting it boil hard, and pour as the foam rises.
