Şekerci Cafer Erol has been making confectionery in Istanbul since 1807, when Mehmet Efendi — from a family that worked in the sweet kitchens of the Ottoman palace, the helvahane and şekerhane — opened his first shop in Eminönü. Today the house is run from Kadıköy, where its flagship has stood since 1945, with branches reaching as far as London and Baku. Almond paste is one of its signature pâtés.
The ingredient list is three items long: almonds, granulated sugar, and drinking water. Nothing else. The paste is shaped by hand into soft, pale rolls and packed into the brand's green 460 g tin; because every piece is hand-rolled, sizes vary slightly from roll to roll.
Turkish almond paste — badem ezmesi — is a close cousin of marzipan, but softer and moister, made to be eaten on its own rather than used in baking. The texture is dense and smooth, with the almond flavour carrying the sweetness rather than the other way around. In Istanbul it is served in slices alongside Turkish coffee, and the tin format makes it a natural gift for anyone who knows Turkish sweets.
