Fıstık ezmesi is Turkey's pistachio marzipan — and Şekerci Cafer Erol's version is about as direct as confectionery gets. The label lists exactly three ingredients: Antep pistachios, sugar, and drinking water. The nuts are ground with sugar into a dense, deep-green paste and shaped by hand into log-shaped pieces, which is why no two pieces in the tin are quite the same size. Unlike lokum (Turkish delight), this is not a gel sweet: it is firm, smooth, and tastes overwhelmingly of pistachio.
The pistachios come from Gaziantep in southeastern Turkey — the small, intensely aromatic variety that gives Turkish pistachio sweets their color and flavor. With no added oils, flavorings, or preservatives on the ingredient list, the paste depends entirely on the quality of those nuts.
Şekerci Cafer Erol traces its craft to the confectionery kitchens of the Ottoman palace in the late 1700s. In 1807, Mehmet Efendi of the Erol family opened a sweet shop in Istanbul's Eminönü district, and the family has been making sweets ever since — today from its Kadıköy flagship and shops across Istanbul, İzmir, Trabzon, London, and Baku.
