Sarma lokum — the wrapped form of Turkish delight — is one of the most demanding confections made in Turkey. Where plain lokum is pressed into slabs and cut into cubes, sarma lokum is rolled: the soft gel base is stretched on a marble counter, a core of whole or chopped nuts is laid along one edge, and the delight is rolled around that filling by hand. The finished piece is firm enough to hold its shape, yielding enough to give way in one clean bite, and carries the nut all the way through the center.
