Tatlı biber salçası is the milder of Turkey's two pepper pastes — the one a Turkish cook reaches for when a dish needs the deep, roasted-sweet flavor of red peppers without the heat of acı biber salçası. This 550g glass jar contains exactly three ingredients: sweet red peppers, lemon juice, and salt. The producer's page states it is made with no additives, and the label notes that 1 kg of paste is made from 3.7 kg of fresh seasonal peppers — which is why the paste is so concentrated and brick-red, and why a single tablespoon does the work that a cup of chopped peppers can't.
If you cook from Turkish recipes, you have already met this jar. Menemen calls for it stirred into the tomatoes before the eggs go in. Lahmacun topping, kısır (bulgur salad), red lentil soup, kofta mixes, bean stews, and dolma fillings all lean on pepper paste, often alongside or instead of tomato paste. Compared with tomato paste it is sweeter, less acidic, and tastes of pepper rather than tomato — many Turkish households use the two interchangeably or blend them half and half. Outside Turkey it also earns its shelf space in marinades, pizza and pasta sauces, hummus, and spread thin on warm bread with olive oil and cheese.
Per 100g (producer's nutrition table): 84 kcal, 3.7g protein, 14.5g carbohydrates, 0.8g fat, 1g salt. Store the jar in a cool, dry place; after opening, the supplier recommends covering the surface of the paste with about 2 cm of vegetable oil and keeping it refrigerated — it will hold for months that way. Net weight 550g, produced in Türkiye.
