Turkish dried persimmon, known as Cennet Hurması, is one of the quiet treasures of Turkey's Black Sea coast. The name translates literally to "heaven's fruit," and the persimmon itself (Diospyros kaki) is strongly tied to the Trabzon region, where it has been grown and dried by hand for generations. According to Turkish food tradition, the fruit travelled the historic Silk Road from East Asia and found a second home in the orchards of Anatolia, with Trabzon becoming its best-known source. What you receive is the whole sun-dried fruit: tan-to-brown, flattened, deeply wrinkled, with the green-brown calyx often still attached and a natural pale bloom of fruit sugar on the surface. That white dusting is not added sugar or any coating — it is the fruit's own sugars rising as it dries, and it is a classic sign of a properly cured persimmon. The texture is soft and chewy, somewhere between a dried fig and a Medjool date, and the flavour is deep, mellow and honey-like with no sourness. The drying is the whole story. Fresh persimmons are picked, peeled and air-dried slowly over several weeks rather than processed with heat or syrup.
