This is Turkish walnut sausage — in Turkish cevizli sucuk — whole walnuts coated layer after layer in thick grape molasses (pekmez) with a pomegranate flavor, then dried into a firm rope. Despite the name it contains no meat: "sucuk" refers only to the sausage shape. The pomegranate is an added fruity note over a grape-molasses base — this is not pure pomegranate molasses.
It comes from the same family as Georgian churchkhela. Walnut halves are threaded onto a string, dipped again and again into warm thickened grape juice until the coating builds up, then hung to dry for days. Slice it across and you see whole walnut centers running through a deep reddish-brown molasses layer — naturally sweet, chewy, and rich with real walnuts. There is no animal gelatin; it is a fruit-and-nut sweet in sausage form.
How to enjoy it
Slice it into thin rounds and serve with strong Turkish tea or coffee, on a dessert or cheese board, or as a high-energy bite on its own. Some traditional makers leave the natural string the walnuts were dipped on inside the rope; if present, simply pull it out before slicing.
