Fitil lokum is the log-shaped style of Turkish delight: instead of small cubes, the confection is rolled into long fingers around a core of whole nuts, then sliced across so every piece shows a cross-section of filling. This one pairs a pomegranate-flavored gel — deep red, with the sharp-sweet edge pomegranate is known for — with whole green Antep pistachio kernels running through the center. The outside is dusted in a white powdered coating that keeps the rolls from sticking and balances the tartness. The texture is what separates finger lokum from boxed cubes. The gel is soft and dense with a slow chew, and the pistachios stay firm, so each bite alternates between the two. In Turkey this style is sold by weight at confectioners' counters rather than pre-boxed, which is why it is offered here the same way: 250 g and 500 g for trying it or serving with coffee, 1 kg for households that go through it quickly, and a 3 kg size for gatherings, gift trays, or anyone restocking a dessert table for Ramadan, Eid, or a wedding sweets spread.
