Pişmaniye is what Turks mean when they say cotton candy — and it is a different thing entirely from the fairground version. Fairground cotton candy is spun sugar and nothing else. Pişmaniye is a floss halva: wheat flour is roasted in butter, then folded by hand into boiled, pulled sugar, over and over, until the mass separates into thousands of fine strands. The result is denser, slower to melt, and tastes of toasted flour and butter rather than plain sugar. Ottoman records place its production in İzmit as far back as the 15th century, and İzmit pişmaniye has held a Turkish geographical indication since 2001.
This 240 g box is the pomegranate version (Nar Aromalı Pişmaniye) from Malatya Pazarı Palancı, the Palancı family confectioner whose story began in 1870 and whose shop No. 44 still trades inside Istanbul's Mısır Çarşısı — the Spice Bazaar. The pomegranate flavor tints the strands pale pink and adds a tart-fruity edge that cuts through the buttery sweetness, which is why many people who find plain pişmaniye too rich prefer this one.
