Muska is one of Gaziantep's most distinctive confections — a soft, chewy triangle of grape-fruit leather (pestil) wrapped around a core of ground Antep pistachio paste. The name comes directly from the Turkish word for an amulet or protective charm, and the triangular shape mirrors the folded-leather talismans once stitched into clothing across Anatolia. That meaning is not decorative; it is the form itself. The filling is a blend of coarsely ground Antep pistachios, a modest amount of powdered sugar, and starch. Antep pistachios — sourced from Gaziantep province and harvested at the early "boziç" stage — carry a grassy, resinous intensity that most pistachios do not. The paste is pressed onto strips of pestil: a naturally sweet, pliable fruit leather made from concentrated Gaziantep grape molasses (üzüm pekmezi) spread and dried over cloth in open air. Each strip is hand-folded into its triangular form and sealed using a traditional technique called dıbıklama, with a small touch of honey to close the seam. The result is layered. The outer pestil gives a yielding chew with a deep, slightly tangy grape sweetness. Underneath, the pistachio paste is dense and nutty, with a faint earthiness from the early-harvest fruit. The two components stay distinct — the grape molasses does not dissolve into the nut paste; it wraps it. Each piece weighs approximately 32 to 35 grams. The format lends itself to eating alongside a small glass of Turkish tea or unsweetened filter coffee, where the sweetness of the pestil and the mild bitterness of the drink balance well. It also travels well and holds its texture: the pestil wrapper keeps the paste moist without becoming sticky. Antep Muska holds Protected Geographical Indication status (Mahreç Sign, Registration No. 360) registered on 13 June 2018 by the Gaziantep Chamber of Commerce under Turkey's Industrial Property Law No. 6769. Under that designation, authentic production requires grape pestil from specific Gaziantep grape varieties and Antep pistachios meeting Turkish Standard TS 1280 — no substitutions are permitted. Available in 250 g, 500 g, 1 kg, and 3 kg. Allergens: Contains pistachio (tree nut) and wheat (wheat starch). May contain traces of other tree nuts. Store in a cool, dry place away from direct sunlight.
