Fitil lokum is one of the most pistachio-forward forms of Turkish delight — and also one of the least familiar to shoppers who know only the cube-cut variety. The word fitil means wick or roll: each piece is shaped into a slender cylinder by spreading a layer of soft, set lokum flat, laying a generous line of pistachios along one edge, and rolling the sheet tightly around the nuts. The result is a cross-section that shows a near-solid core of pistachio rather than scattered fragments, so every bite is as much about the nut as the confection surrounding it.
The lokum itself is made the traditional way: sugar and cornstarch cooked low and slow until the starch sets the mixture into a firm, bouncy gel — smooth, pull-resistant, and noticeably denser than mass-market varieties. Once cooled and rolled, the cylinders are dusted with a fine coat of powdered sugar and cornstarch to keep them from sticking.
The pistachios come from Antep — the region around Gaziantep in southeastern Turkey, long regarded as the source of Turkey's finest pistachios. Antep pistachios are smaller and more intensely flavored than most other varieties, with a resinous, almost buttery richness that holds its character even when encased in sweetened starch. The combination of chewy, subtly sweet lokum and concentrated Antep pistachio is why this style has been a fixture in Turkish confectionery for generations.
Serving: fitil lokum is traditionally offered alongside Turkish tea or coffee, where the slight bitterness of the drink sharpens the sweetness of the delight. It travels and gifts well — the cylindrical pieces hold their shape and look striking on a dessert spread.
