Pişmaniye is Turkey's spun floss halva — the country's answer to cotton candy, and nothing like the spun-sugar fairground kind. Thin threads of wheat flour roasted in oil are pulled through hot sugar syrup again and again until thousands of fine, silky strands form. The result melts on the tongue: airy, gently sweet, with the nutty edge of real Antep pistachio dusted over the top. This is the Uğurlu 240g jar, finished with whole and ground pistachios.
Turks call it tel helva ("thread halva") and it has been made in İzmit, in Turkey's Kocaeli region, for well over a century — sold by street vendors there to this day. Abroad you'll also see it labelled floss halva, dragon beard candy, or simply Turkish cotton candy. It is the same sweet under different names.
How to enjoy it: Pişmaniye is the classic companion to Turkish coffee or a glass of black tea — pull off a small tuft and let it dissolve between sips. It works on a dessert or mezze table, crumbled over ice cream, or boxed as a gift. Because it is shelf-stable and needs no refrigeration, it travels well and keeps for months in a sealed, dry place, which is why it has long been a favourite souvenir.
