Nuri Toplar Turkish coffee with mastic is a finely ground coffee from Kurukahveci Nuri Toplar, an Istanbul roaster working since 1890. Small batches of selected beans are roasted over a wood fire rather than gas or electric heat, and a touch of mastic (damla sakizi) is blended in before grinding. The result is the classic deep, foamy cup of Turkish coffee carrying a clean resinous note on top of the roast.
Mastic is the aromatic gum tapped from a Mediterranean tree of the same family as the pistachio. In coffee it adds a cool, slightly sweet aroma often compared to a blend of fennel, anise and mint, which sits behind the coffee instead of covering it. People who already enjoy plain Turkish coffee and want something a little more fragrant tend to reach for the mastic version.
The grind is extra fine, made for a cezve (Turkish coffee pot). A common starting point is about 5 to 6 grams, roughly one and a half teaspoons, for every 65 ml of cold water, adjusted to taste. Stir in the coffee and any sugar over low heat, lift the pot as the foam rises, share the froth between the cups, then return the pot briefly before pouring the rest.
