Koska has been producing traditional Turkish sweets since 1907, when the family opened a small halva shop in Denizli. The brand carried that craft to Istanbul in 1931, settled in the neighbourhood known as Koska, and eventually gave the neighbourhood its modern-day reputation for confectionery. This pistachio lokum is made from sugar, corn starch, and powdered Antep pistachio (14%). The pieces are cut into generous cubes, packed with whole and chopped green pistachio, and dusted with fine icing sugar before being packed in the brand's signature hexagonal gift box. Antep pistachio comes from Gaziantep in southeastern Turkey, where the hot, dry climate and volcanic soil produce a nut with a distinctly sweet, buttery flavour and a clean, slightly grassy finish. In 2013, Gaziantep pistachio Turkish delight received Protected Geographical Indication (PGI) status from the European Union — a recognition that the combination of Antep nut and lokum technique is specific to this region. Turkish delight itself — lokum in Turkish, راحة الحلقوم in classical Arabic — has been documented in Istanbul recipes from the late 18th century. The confection is built on a slow-cooked starch-and-sugar gel that sets into a soft, springy texture. The pistachio version adds a textural contrast: each bite alternates between the yielding jelly and the snap of a roasted nut. Dusted icing sugar keeps the pieces separate and provides the powdery sweetness that is part of the classic experience. Koska's pistachio lokum is certified Halal and Kosher. It is suitable for vegetarians. It contains pistachio, which is a tree nut and a recognised allergen — people with tree nut allergies should not consume this product. The product is manufactured in a facility that processes nuts.
