Turkish delight itself — lokum in Turkish, راحة الحلقوم in classical Arabic — has been documented in Istanbul recipes from the late 18th century. The confection is built on a slow-cooked starch-and-sugar gel that sets into a soft, springy texture. The pistachio version adds a textural contrast: each bite alternates between the yielding jelly and the snap of a roasted nut. Dusted icing sugar keeps the pieces separate and provides the powdery sweetness that is part of the classic experience. Koska's pistachio lokum is certified Halal and Kosher.
