Sahlep — spelled salep in Turkish, sahlep in Arabic — is the classic Ottoman winter drink: thick, warm, lightly sweet, scented with cinnamon, with a silky texture unlike anything coffee or tea produces. For centuries it was sold from copper urns on street corners from Istanbul to Cairo to London, where it was known as "saloop" before coffee took over. How to prepare: Combine 20 g (about 2 heaped teaspoons) with 200 ml of hot milk in a small saucepan. Whisk continuously over medium heat for 2–3 minutes until the mixture thickens. Pour into a glass and dust with cinnamon. Can also be made with water, though milk gives a richer result.
