Hafiz Mustafa 1864 is Istanbul's most recognised confectionery house — founded in 1864 by Hadji İsmail Hakkı Bey in the Bahçekapı district of Istanbul during the reign of Sultan Abdulaziz, and still producing from the same city more than 160 years later. This sahlep comes in the brand's signature white square metal tin, embossed with the HM 1864 portrait lid and the word SALEP on the side panel.
Sahlep (also spelled salep or sahlab) is one of the oldest hot drinks in Ottoman and Turkish culture. The base ingredient — dried and ground tubers of wild orchids — gives the drink its characteristic thick, smooth texture and faintly floral warmth. On average it takes roughly 1,000 orchid tubers to produce one kilogram of salep flour, which is part of why genuine salep has been a protected commodity and why Turkey restricts its raw export. The same polysaccharide compound (glucomannan) that makes sahlep viscous is also what gives Maraş dondurma — Turkey's stretchy ice cream — its famous chewiness.
This Hafiz Mustafa product is a ready-to-use drink mix. The powder dissolves into hot milk to produce the creamy, lightly spiced cup that street vendors have sold from copper kettles across Istanbul for centuries. One tin yields approximately 8–10 cups.

How to prepare: Warm your milk in a small saucepan over low heat. Whisk in the sahlep powder gradually, stirring constantly until the liquid thickens. Pour into a cup and dust with extra cinnamon if desired. Do not boil.
