Saray kadayıf is one of Istanbul's most recognisable palace-style sweets, and this version comes from Hafiz Mustafa, the confectioner founded in the Bahçekapı district of Istanbul in 1864. Each piece is built from tel kadayıf, the fine shredded pastry that looks like angel-hair strands, wrapped neatly around soft Turkish delight (lokum, what the Ottomans called rahat-ı halkum). Here the delight is flavoured with pomegranate, which gives it its deep reddish-purple colour, and the squares are studded with green pistachios for crunch and contrast.
The combination is what makes saray kadayıf different from a plain syrup-soaked kadayıf or a piece of plain lokum.
