Hafiz Mustafa has been making sweets in Istanbul since 1864, when Hacı İsmail Hakkızade set up shop in the Bahçekapı district — the same founder name and year printed on this deep-red tin. Alongside its baklava and Turkish delight, the house blends this pomegranate fruit tea — the ruby glass poured in its Istanbul shops.
The published recipe is fruit first: 57% pomegranate seeds, with hibiscus, pomegranate peel, clove, cinnamon bark, rose petals and natural pomegranate flavouring. There are no tea leaves in the blend — it is a pure fruit-and-spice infusion, naturally caffeine-free, as easy to pour in the evening as in the afternoon. The cup brews deep ruby: tart from hibiscus and pomegranate up front, a quiet warmth of clove and cinnamon behind it, rose petals visible in the loose blend.
Brewing, the Hafiz Mustafa way: for two glasses, steep 10 g in 250 ml of just-boiled water for 10 minutes without stirring, then strain and top up with hot water to taste. For a four-person pot, 20 g in 500 ml for 15 minutes. For iced tea, brew it double strength and pour over ice — the colour holds. At the brand's 10 g measure, a 75 g tin makes about seven small pots.
