This is the pistachio-walnut baklava assortment from Hafiz Mustafa, the Istanbul confectioner founded in 1864 in Bahçekapı, during the reign of Sultan Abdülaziz. The house won 11 European medals for bakery and confectionery between 1926 and 1938, and the same oval emblem from that era — Hacı İsmail Hakkızade Hafız Mustafa 1864 — sits on the lid of the red collector's tin this baklava arrives in.
Inside the tin, the pieces are arranged in neat rows: pistachio-wrapped rolls, green pistachio-paste rounds, twisted bülbül yuvası pieces, pistachio sarma slices, chocolate-glazed baklava, and golden walnut baklava. Pistachio pieces carry the deeper green of Antep pistachio; walnut pieces are darker and slightly less sweet — having both in one box settles the pistachio-versus-walnut question for a mixed table.
Three sizes. The Small Box holds roughly 750–800 g with five assorted lines — three pistachio, two walnut. The Medium Box holds about 1–1.1 kg in the same five-line layout. The Big Box holds roughly 1.9–2 kg, split close to half pistachio and half walnut. The embossed İstanbul tin keeps the layers intact and is the kind of box that gets kept after the baklava is gone — which is why this assortment is so often bought as a gift.
We buy this baklava fresh from the Hafiz Mustafa patisserie in Istanbul. Contains pistachios, walnuts, and wheat (gluten); made in a facility that handles nuts.
