Hafiz Mustafa Pistachio Princess Baklava – Rolled, in Metal Gift Tin

Princess baklava — prenses baklava in Turkish — is Hafiz Mustafa's rolled take on the classic: thin phyllo wrapped long and slim around a soft cream filling, then coated head to toe in ground Gaziantep pistachio and finished with pistachio slivers. Where classic baklava hides its nuts between flat layers, this one wears them on the outside — every piece cuts green and tastes of pistachio first, pastry second.

Hafiz Mustafa has made sweets in Istanbul since 1864, when Hacı İsmail Hakkı Bey opened his confectionery in Bahçekapı; between 1926 and 1938 the house won 11 medals at European fairs for its baking and confectionery. The brand states this baklava is baked daily with butter and natural beet sugar instead of glucose syrup, with no preservatives, additives or colorants.

Both sizes come in Hafiz Mustafa's metal tin with the founder's portrait on the lid — the same tins sold at the brand's Istanbul shops — which is why this baklava is as much a gift as a dessert: Eid tables, weddings, housewarmings, or a thank-you that travels well.
