Hafiz Mustafa has been making Turkish sweets in Istanbul since 1864, and this Pistachio Halep Kadayif is one of its signature pieces. Halep refers to Aleppo, the region this rolled style traces back to, and the dessert stays true to that origin: fine strands of shredded kadayif pastry wrapped by hand into tight spirals, each cylinder packed at its center with whole green pistachios. The technique is what sets it apart. The pastry strands are formed fresh, brushed with plain butter, rolled around the pistachio filling, baked until the outer shell turns golden and crisp, then finished with a light sugar syrup.
