Çifte kavrulmuş — “double roasted” — is the lokum Istanbul takes seriously: the delight paste is cooked a second time over the kettle, so each cube comes out denser, chewier and deeper in colour than everyday Turkish delight. This tin holds Hafiz Mustafa’s mixed double roasted pistachio assortment. Every cube is packed with whole pistachios, and the varieties move through pomegranate, honey, coconut, kiwi and orange, coloured only with natural extracts such as paprika, curcumin and anthocyanin, then finished with a light sugar dusting.
Hafiz Mustafa has made sweets in Istanbul since 1864, when Hacı İsmail Hakkı Bey opened a sugar-candy shop in Bahçekapı during the reign of Sultan Abdulaziz. His son Hafız Mustafa gave the house its name, and the oval portrait emblem reading “Hacı İsmail Hakkızade Hafız Mustafa 1864” still seals the famous red metal tin. The confectioner states it uses no preservatives, no additives and no artificial colourants, sweetening its lokum with natural beet sugar.
