Walnut cezerye is one of Turkey's oldest carrot confections, and this version takes it to its richest form: soft rolls of caramelized carrot paste pressed and coated in whole walnut halves. The texture is the whole point. Inside, a dense, chewy carrot core; outside, the deep bite and crunch of roasted walnuts wrapped around every roll. It is sold by weight so you can keep a small box for tea time or a larger one for a gathering.

If you have never tried cezerye, it helps to know what it is not. Cezerye is not lokum (Turkish delight). It belongs to its own category, a confection built on grated carrot that is boiled and then cooked down with sugar until it turns into a thick, glossy paste, then finished with nuts. The name itself comes from the Arabic word for carrot, "cezer" (جزر). The result is naturally deep reddish-brown, fudgy rather than jelly-like, and far less sweet on the finish than most Turkish sweets.

Cezerye comes from Mersin, on Turkey's southern Mediterranean coast, where it has been made the same way for generations. "Mersin Cezeryesi" holds a protected geographical indication in Turkey that ties authentic production to the Mersin region, the same kind of origin protection used for famous regional foods. Traditionally cezerye is made with walnuts, hazelnuts, or pistachios; this is the walnut version, the most rustic and the most popular, where the nut is not just folded in but used as the outer coat.

How people eat it: cut into small pieces and served alongside Turkish coffee or black tea, set out on a sweets tray during Ramadan, Eid, weddings, and the New Year, or simply kept as a pantry treat for an afternoon craving. The carrot paste keeps it moist, so it does not dry out as quickly as nut brittle.
