Doğuş Rize Çayı is a loose leaf black tea from Rize, the tea-growing heart of Türkiye's eastern Black Sea (Karadeniz) coast. The region's rainy, mild climate and fertile hillsides are what give Turkish tea its deep amber-red colour and full, brisk character. This is the everyday tea Turkish households reach for from morning to evening.
The pack holds 500 g of pure loose leaf black tea (siyah çay) under the familiar yellow Doğuş packaging. Loose leaf, not bags, so you control the strength of every pot.
How Turkish tea is brewed
Turkish tea is made in a çaydanlık, the stacked double teapot. Add the loose leaf to the small upper pot and fill the larger lower pot with water. Once the water below comes to a boil, pour some over the leaves in the top pot, top the lower pot up again, and let both sit over low heat so the leaves steep in the rising steam. After roughly ten to fifteen minutes you have a strong concentrate known as dem.
To serve, pour the dark concentrate from the upper pot into a tulip glass, filling it part way, then top up with hot water from the lower pot. More concentrate gives you koyu (dark and strong), less gives you açık (light). Everyone at the table sets their own strength from the same pot. Serve in the classic narrow-waisted glass, with sugar to taste.
