Dibek coffee takes its name from the stone mortar (dibek) in which coffee beans were traditionally pounded with a pestle, long before machine grinders existed. This slow, stone-ground method keeps more of the coffee's natural oils in the grounds, producing a cup with a velvety, full-bodied texture and a deeply roasted character.
What sets this blend apart is the mastic gum, an aromatic resin harvested in tear-shaped droplets from the mastic tree (Pistacia lentiscus). Mastic lends a clean, gently piney and cedar-floral note that lifts the roast and gives every cup a recognisable, perfumed finish. Here it is used purely for flavour and aroma, the way Turkish coffee houses have used it for generations.
To brew it Turkish-style, add one heaped teaspoon of the finely ground coffee per cup to a cezve (ibrik) along with cold water, and sugar if you like. Heat slowly over low to medium heat without stirring. As a thick foam rises toward the rim, lift the cezve off the heat, spoon the foam into your cups, then return it briefly before pouring the rest. Serve in small cups with a glass of water on the side.
