Cezerye is one of Turkey's oldest confections, traced to the city of Mersin on the southern Mediterranean coast. It starts with grated carrots that are slowly cooked down with sugar until they caramelize into a deep amber paste with a soft, chewy, almost fudge-like texture. The word itself comes from the Arabic "jazriyya," meaning "made with carrot," and the recipe has been passed through Turkish kitchens for generations.
This version is the hazelnut style, cut into flat leaf-shaped slices (yaprak cezerye). Whole roasted hazelnuts are folded through each piece, so you get a crisp, buttery crunch against the smooth caramelized carrot. The slices are then rolled in fine desiccated coconut, which gives a snow-white finish and a light, nutty contrast to the dense interior. The carrot is not sharp or vegetal once cooked down; it reads as warm, mellow, and naturally sweet, often carried by a faint note of cinnamon.
