Made from the upper tea leaves, it steeps to a deep, bright crimson - the ruby colour Turkish drinkers look for in a properly demlenmiş glass. How to brew it the Turkish way: use a double teapot (çaydanlık). Boil water in the lower pot, add 2-3 teaspoons of tea per cup to the dry upper pot, pour the boiling water over the leaves, then return the upper pot to steam over the lower one for 10-15 minutes. Pour the dark concentrate (dem) into the glass first, then top up with hot water to the strength you like - açık (light), tavşan kanı (rabbit-blood red), or koyu (strong).
