Fıstık Bahçesi — "Pistachio Garden" in Turkish — is not the cube-shaped lokum most people picture. It belongs to the same Gaziantep-inspired family as antep rüyası: a layered pistachio specialty, pressed in slabs and cut into squares, where the pistachio is the structure of the dessert rather than a garnish inside it.
Each piece is built in visible strata. Bright green layers of ground Antep pistachio alternate with thin, pale lokum layers, separated by seams of bitter chocolate that cut through the sweetness.
