Each 290g glass jar contains lemon peel at 65%, apple juice concentrate (the natural sweetener that replaces refined sugar), powdered ginger at 0.15%, and lemon juice as an acidity regulator. There is no added refined sugar, no preservatives, and no artificial colour. The texture is a thick spreadable preserve with finely-cut lemon-peel pieces visible through the spoon; the colour is pale honey-amber. The flavour leads with bright lemon-peel zest and warm pith-bitter notes, with the ginger arriving on the back end — restrained, never sharp, just enough to lift the citrus into a warm finish.
